Ajwain is most commonly found in Indian and African cuisine. With an intense flavour that hints at both cumin and thyme, it's especially useful in lentil and bean dishes as a flavoring, and to temper the effects of a legume-based diet. Ajwain should be used sparingly as too much can quickly make a dish bitter.
